Celeriac with CBD: ingredients for 4 people

CBD Celeriac is a simple and delicious way to introduce the soothing benefits of good cannabidiol into your kitchen. The recipe we offer you today does not require any special skills and can be made in less than an hour, making it the perfect choice for a healthy and light weeknight dinner.

Here are the ingredients you will need:

  • 1 medium celery root, peeled and cut into cubes;
  • 2 tablespoons of olive oil;
  • 30 ml of CBD oil premium;
  • 2 cloves of garlic, finely chopped;
  • Salt and black pepper;
  • A small bouquet of fresh thyme (optional);
  • 100 ml of liquid cream for cooking;
  • 50 g grated parmesan (optional for garnish);
  • A few leaves of fresh parsley to decorate.

Celeriac with CBD: let’s move on to preparation

Start by preheating your oven to 200° C. While the oven is heating, peel and cut the celeriac into approximately 2cm cubes to ensure even cooking. Place these cubes in a large bowl, drizzle them with olive oil and add the chopped garlic, salt and pepper. Mix well so each piece is coated with oil and seasonings.

Spread the celeriac cubes on a baking tray lined with parchment paper. Scatter a few sprigs of fresh thyme over the celery if you chose to use this herb for flavoring. Put in the oven and roast for about 30 to 40 minutes or until the celeriac is tender and starting to caramelize around the edges.

While the celery root is roasting, this is the perfect time to prepare the CBD sauce. In a small saucepan, gently heat the liquid cream without letting it boil. Turn off the heat and gently stir the CBD oil into the hot cream. This allows the CBD to bind evenly to the cream to maximize the organic flavors and soothing benefits without denaturing it with excessive heat.

If you have some time, gently heat the CBD oil and a few sprigs of thyme in a small saucepan over very low heat for a few minutes. This gentle infusion helps release the aromas of the thyme into the oil to create a deep flavor base for your sauce. Strain the oil to remove the thyme before adding it to the cream.
