Ingredients for cranberry and CBD quinoa salad (serves 4)
This salad full of good things will quickly find its place in your daily life. Allow about 30 minutes to prepare it. Here are the ingredients for 4 people:
- 200 g of well-rinsed quinoa;
- 500 ml of water or vegetable stock to cook the quinoa;
- 100 g dried cranberries;
- 30 ml of quality CBD oil;
- 1 medium cucumber, diced;
- 1 red pepper, diced
- 4 sliced green onions
- 50 g nuts, for example lightly toasted almonds or pecans;
- A few leaves of fresh mint or chopped parsley, to garnish.
For the vinaigrette:
- 60 ml of extra virgin olive oil;
- 30 ml of cider vinegar;
- 1 tablespoon of honey or maple syrup;
- Salt and freshly ground black pepper.
Cranberry and CBD quinoa salad: let's get ready
Start bycooking the quinoa. Bring the water or vegetable stock to the boil, add the rinsed quinoa then simmer over low heat. Cover and cook until the quinoa is tender and the liquid is absorbed. Allow between 15 and 20 minutes for this operation.
Turn off the heat and let the quinoa sit covered for 5 minutes, then fluff it with a fork to cool.
While the quinoa is cooking, prepare the vegetables. Dice the cucumber and red pepper, and slice the green onions. Put these vegetables in a large salad bowl, where you will add the cooled quinoa. Incorporate the dried cranberries and toasted walnuts into the quinoa mixture and vegetables.
For the vinaigrette, in a small bowl, combine the olive oil, cider vinegar, honey or maple syrup, salt and pepper. Whisk until the mixture is well emulsified.
The chef's secret Before mixing the CBD oil with the dressing, heat it slightly. Using CBD oil at room temperature or slightly warm can pair it better with the other ingredients in the dressing. Make sure the oil is not too hot to preserve the calming properties of cannabidiol. |
